Steps

  1. In a large bowl, add 6 bone-in chicken thighs, coating them well. Set aside to marinate for 20-30 minutes while you prepare the potatoes.
  2. In a baking dish, toss 1lb. of halved baby potatoes drizzle olive oil, salt, and pepper. Spread them evenly across the dish.
  3. Add the marinated chicken thighs over the potatoes, skin side down. Cover the dish with foil.
  4. First Bake: Bake at 375°F for 50 minutes.
  5. Final Bake: Remove from the oven, uncover, and flip the chicken so the skin side is up. Increase the temperature to 425°F and bake, uncovered, for an additional 30 minutes, until the skin is crispy and golden brown.
