Steps

  1. Trim the excess fat off each chicken breast
  2. Gently use a meat tenderizer on both sides of each chicken breast (Note: this step is to ensure the flavors marinate within the chicken)
  3. Cut each chicken breast into 2 inch wide strips
  4. Open the can of diced pineapple and separate the pineapple from the juice (Note: DO NOT discard the pineapple juice)
  5. Pour 1-2 bottles of italian dressing into a container. Ensure your container has a lid for future steps.
  6. Add ½ a cup of pineapple juice to the container of italian dressing (Note: You can add more pineapple juice if you prefer)
  7. Add the chicken strips into the container with the italian dressing and pineapple juice, then close the lid
  8. Place the container of chicken in the fridge and let the chicken marinate for at least an hour - shake the container after a ½ hour of marinating, then place back into the refrigerator for the last ½ hour of marination
  9. Preheat the oven to 425 degrees Fahrenheit
  10. Remove the marinade mix from the fridge, remove the chicken strips and place them on a roast baking sheet (Note: You will need a baking sheet with depth due to the italian dressing/pineapple juice)
  11. Add all of the the diced pineapples over the chicken strips
  12. Pour the italian dressing/pineapple juice marinade over the chicken and diced pineapples
  13. Once the oven is pre-heated, place the baking sheet in the oven
  14. Cook the chicken for a total time of 18-20 minutes, flipping the strips halfway thru
  15. Once the chicken is in the oven, begin preparing the long grain white rice

  17. Follow the cooking instructions for the type of long grain white rice selected
  18. After the chicken have cooked for 18-20 minutes, remove them from the oven
  19. (Note: Ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit)
  1. Once the chicken has finished cooking and the rice is ready:
  2. Place the rice in the middle of each plate and then add the desired amount of chicken and diced pineapples over the rice
  3. Pour the excess cooked italian dressing/pineapple juice mixture from the baking sheet over the chicken, pineapples and rice - ensure the rice underneath receives the excess juice, as this is what flavors the rice
