Steps
- Trim the excess fat off each chicken breast
- Gently use a meat tenderizer on both sides of each chicken breast (Note: this step is to ensure the flavors marinate within the chicken)
- Cut each chicken breast into 2 inch wide strips
- Open the can of diced pineapple and separate the pineapple from the juice (Note: DO NOT discard the pineapple juice)
- Pour 1-2 bottles of italian dressing into a container. Ensure your container has a lid for future steps.
- Add ½ a cup of pineapple juice to the container of italian dressing (Note: You can add more pineapple juice if you prefer)
- Add the chicken strips into the container with the italian dressing and pineapple juice, then close the lid
- Place the container of chicken in the fridge and let the chicken marinate for at least an hour - shake the container after a ½ hour of marinating, then place back into the refrigerator for the last ½ hour of marination
- Preheat the oven to 425 degrees Fahrenheit
- Remove the marinade mix from the fridge, remove the chicken strips and place them on a roast baking sheet (Note: You will need a baking sheet with depth due to the italian dressing/pineapple juice)
- Add all of the the diced pineapples over the chicken strips
- Pour the italian dressing/pineapple juice marinade over the chicken and diced pineapples
- Once the oven is pre-heated, place the baking sheet in the oven
- Cook the chicken for a total time of 18-20 minutes, flipping the strips halfway thru
- Once the chicken is in the oven, begin preparing the long grain white rice

- Follow the cooking instructions for the type of long grain white rice selected
- After the chicken have cooked for 18-20 minutes, remove them from the oven
- (Note: Ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit)
- Once the chicken has finished cooking and the rice is ready:
- Place the rice in the middle of each plate and then add the desired amount of chicken and diced pineapples over the rice
- Pour the excess cooked italian dressing/pineapple juice mixture from the baking sheet over the chicken, pineapples and rice - ensure the rice underneath receives the excess juice, as this is what flavors the rice
