Steps

  1. Coat and rub in the seasoning generously on the prime rib. Once that is done take saran wrap and wrap all sides of the prime rib to seal it good. Wrap it like a ball and use plenty of saran wrap
  2. Take the saran wrapped prime rib and put it in the refrigerator for 24 hours in a bowl so it does not leak in your refrigerator. After 24 hours take it out of the refrigerator and remove all of the saran wrap from the prime rib and place it back into the refrigerator for another 24 hours, keep it uncovered. Once those two steps are completed you are ready to bake it.
  3. Take it out of the refrigerator and place it on the kitchen counter for 1-2 hours to get to room temperature. Preheat the oven to 200 degrees F lower the oven rack to the bottom 1/3 of the oven.
  4. Place the prime rib into a roaster pan with a rack, bone side down and place in the oven uncovered.
  5. Depending on the size of the prime rib it will take 4-6 hours in the oven. Starting checking the temperature of the center of the prime rib around 3 1/2 hours, once it hits 120 degrees F take out of the oven and place on the kitchen counter for 30 minutes to let it stand. The meat will be at the medium to medium rare stage. At this point the prime rib will look awful and that is ok.
  6. Turn the oven to 450 degrees F and place the prime rib back in the oven for 8-12 minutes to sear the top of the prime rib.
  7. When you take it out of the oven it is read to cut and serve do not let it stand as that has already been done in the earlier step. This will be the best most tender prime rib you will ever have. You won't order prime rib at restaurants anymore after making it yourself. Enjoy!
